Belonging to the Gadidae family, cod includes two well-known species: Atlantic cod, found in the Atlantic Ocean and North Sea, and Pacific cod, which thrives in colder Pacific waters near Alaska. Both varieties are widely enjoyed fresh, frozen, or preserved. Salted cod, commonly known as baccalà, and air-dried stockfish from Norway’s Lofoten Islands are traditional preparations that highlight cod’s long-standing role in global cuisine.
